Homemade Egg Salad Sandwich Recipe Topped With Fresh Vegetables

Egg Salad Sandwich

Recently I was craving an easy egg salad sandwich that I used to eat when I was a child. Sometimes I like to come back to my childhood food memories. I like to remind myself of what I ate when I was little. This food is the best. You remember what your mom or grandma prepared and you think this was the best food ever. I always think that way.

Therefore, I’ve decided to make my favorite egg salad sandwich for my lunch the other day. This is the sandwich that my grandma used to make.

How to Make An Easy Egg Salad Sandwich

What’s In An Egg Salad?

My egg salad is made with:

  • Eggs
  • Butter

That’s it! I literally hard boiled some eggs and then mashed them up with butter. I don’t use mayo in my egg salad, I’m just not a fan. But some people make it even creamier with either mayo or mustard or both.

1. Mash Hard-Boiled Eggs With Butter

First, you need to boil the eggs. Mash them with a fork, add softened butter and season with salt and pepper.

2. Add Veggies

Then you can add any veggies that you have in your home to your sandwich. I had tomato, cucumber, lettuce and radishes. This egg salad sandwich was so easy and delicious.

This is the kind of sandwich that I want to eat often for lunch.

Homemade Egg Salad Sandwich

Ingredients

  • 2 eggs hard boiled
  • 1/2 Tbsp. butter softened
  • 2 bread slices toasted
  • 1 lettuce leaf
  • 3 to mato slices
  • 2 cucumber slices
  • 1 radish sliced
  • salt/pepper

Instructions

  • In a small bowl mash eggs with fork, add butter. Season with salt and pepper. Combine everything together.
  • Prepare 1 bread slice, put lettuce leaf, add egg salad.
  • Add sliced tomato, cucumber and radish.
  • Close with another slice of bread.
