S’mores Hershey Kiss Cookies
Hands down I am a peanut butter cookie fan. The peanut butter blossom has always been a favorite of mine. Today I am putting a sweet twist on it and making S’mores Hershey Kiss Cookies!
I know you are all saying “Yes, please” with hands raised high! I love toasted marshmallows with chocolate…and this version on top of a peanut butter cookie base will not disappoint.

S’mores Hershey Kiss Cookies
Makes 2 dozen cookies
Ingredients
1/4 C unsalted sweet cream butter
1/2 C sugar
1/2 C brown sugar, packed
1 C peanut butter
1/4 C shortening
1 large egg
1 1/4 C flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
24 regular size marshmallows
24 Hershey kisses, unwrapped
Directions
Preheat the oven to 350 degrees
Place parchment paper onto a cookie sheet and set aside
Using a standing mixer, cream together the butter, sugar, brown sugar, peanut butter and shortening and mix until combined
Add the egg and mix until combined
In a large bowl, using a whisk mix in the flour, baking soda, baking powder and salt.
Gradually add the flour mixture into the wet mixture until combined
Using an ice cream scoop, scoop some cookie dough into your hands and roll into a ball
Roll cookie dough ball into the sugar and then place onto the cookie sheet
Repeat the steps for 11 more cookie dough balls
Use a fork to flatten cookies a bit in a criss-cross pattern
Bake in the oven for 5 minutes
Pull the cookies out and place each marshmallow on the cookie
Bake for another 5 minutes or until the marshmallow is lightly toaster
Pull cookies out and place unwrapped Hershey kiss into the center
Let cool completely before enjoying!

This recipe calls for peanut butter and baking soda, but the instructions do not list when to add them. I added the peanut butter to the butter/sugar mixture. Should I be using the baking soda (not in the directions) or just the baking powder – which is listed in the ingredients and the directions??
