Chocolate Truffles Ingredients:

  • Semi-sweet chocolate chips
  • Heavy whipping cream and
  • Unsweetened cocoa powder

Making the Chocolate Ganache: The first step in making any type of truffle is to create a chocolate ganache. This is simply a mixture of melted chocolate and cream.

Start by placing your chocolate chips into a medium size bowl. On the stovetop in a small saucepan, over medium-high heat, bring the heaving whipped cream to a boil and boil for 1 minute.

Pour the hot cream into the bowl of chocolate chips and stir until the chips are melted and smooth. If there are any lumps or bumps in your ganache, you can strain it through a mesh strainer to remove them.

Truffle Flavor Options:

Now that your ganache is ready, it’s time to add some flavorings if desired.

Experiment with flavors using vanilla or peppermint extract. Stir into the ganache to taste before refrigerating.

Cover the bowl with plastic wrap and place it in the refrigerator for a couple of hours or over night.

After chilling, remove the bowl from the refrigerator. Use a small spoon or melon baller to shape the chocolate mixture into small balls. The ganache should be thick enough to hold its shape when scooped out. Place back into the refrigerator to chill for a couple more hours.

Place the truffles onto a baking sheet lined with wax paper.
