Hugs Peanut Butter Blossom Cookie Recipe

Makes 3 dozen cookies

Ingredients:

Sugar plus 2 more cups to roll the cookie in 

Light brown sugar 

Creamy peanut butter

Shortening

Unsalted sweet cream butter, softened

Large egg

Flour

Baking soda

Baking powder

Kosher salt

What is sweet cream butter?

Sweet cream butter is the main ingredient in most American style butter. It is made from pasteurized fresh cream. European butter is usually made from cultured sour cream giving it a less sweet taste. Sweet cream butter comes in both salted and unsalted to meet recipe guidelines.

Directions:

1. Preheat the oven to 350 degrees and line two cookie sheets with parchment paper.

2. Using a standing mixer, beat together the sugar, brown sugar, peanut butter, shortening, butter, and egg until combined and smooth

3. In a large bowl, whisk together the flour, baking soda, baking powder, and salt

4. Gradually beat in the dry ingredients into the wet until combined and a dough forms

5. Using a small ice cream scooper, scoop out some dough onto your hands

6. Roll the dough into a ball

7. Pour the two cups of sugar into a bowl

8. Roll the cookie dough into the sugar and then place onto the cookie sheet

9. Repeat steps with 11 more cookies

10. Place the cookies into the oven and bake for 11 minutes

11. While the cookies are baking, remove the wrappers from the Hershey kisses

12. Once the cookies come out of the oven, allow them to cool slightly for 1-2 minutes

13. Place the Hershey kisses into the center of the cookies and allow to continue to cool for 5 more minutes before moving to a wire rack

Repeat steps with remaining dough

The Hugs peanut butter blossom cookies will stay fresh placed in a sealed container for up to one week. They may also be placed in the refrigerator but this is not necessary.

Can you freeze peanut butter blossom cookies?

Yes, these cookies can be placed in the freezer for up to 3 months in a sealed container. Once cookies are cooled, place them in a container with a lid. Use wax paper or parchment paper between the layers of the cookies so they don’t stick together. When ready to serve simply take out of the freezer and defrost them on a plate for about 45 minutes.
