Spicy Zucchini Taco Boat Recipe

Zucchini Taco Boat

Eating low carb just got a whole lot more fun! I love making recipes that have a bit of spice to them. The flavors seriously pop in this recipe.

I had to find a way to be creative with zucchini this summer. They are always so plentiful! These veggies are incredibly easy to grow so they are pretty affordable.

But another fantastic thing about zucchinis is how low in net carbs they are. This makes them one of my favorite vegetables to fix for dinner.

I took their long shapes and created a sort of boat out of them. The result is unforgettable. You will love them too.

Ingredients

Here is what I used in my zucchini taco boats.

  • Zucchinis
  • Ground turkey
  • Black beans
  • Corn kernels
  • Red onion
  • Red pepper
  • Jalapeños
  • Pepper
  • Garlic Powder
  • Shredded mozzarella cheese
  • Salsa

How to Make Skinny Zucchini Taco Boats

The entire recipe is at the bottom of this post in a printable recipe card. Print it out or just pin this post to your recipe board.

Here’s an overview of how I made these taco boats. It’s so easy!

  1. Start by dicing the onion, red pepper, and seeded jalapeños.
  2. Next cut the end off of each end zucchini and slice lengthwise.
  3. Scoop out the insides with a spoon.
  4. Brown the ground turkey, and add in diced vegetables, black beans, corn, pepper, garlic powder, and onion powder.
  5. Stir on medium heat until warm.
  6. Spoon mixture into each zucchini.
  7. Place “boats” into a baking dish and cover with foil.
  8. Bake at 400 degrees for 25 minutes.
  9. Remove foil, and add shredded cheese to each boat.
  10. Bake uncovered an additional 5 minutes or until cheese is melted.
  11. Serve and enjoy!

Can you leave the beans out?

Beans have a bad reputation. They are known to cause inflammation and gas. If you want, you can definitely leave them out. This will still taste just as amazing, I promise!

For Low-Carb, Leave Out the Corn

Corn is a known carbohydrate. If you are eating Keto, you will want to skip that step.

Other Meats You Can Use

I used turkey because I really enjoy the flavor. Plus, it’s lean meat. But if you want, you can make this with these meats too:

  • Ground beef
  • Ground chicken
  • Ground pork
  • Shredded chicken
  • Shredded pork loin

Other Veggies to Turn Into Keto Taco Boats

I enjoyed the zucchini taco boats. But if you want to try something new and different, here are some more ideas of vegetables you can use instead.

  • Spaghetti squash
  • Butternut squash
  • Avocado
  • Sweet Potato
  • Stuffed peppers

Be creative. Think of something that is large enough to hold the meat, spices, and veggies. Then fill it up and bake it.

Ingredients

  • 5 Zucchinis  Large
  • 1 lb. Ground Turkey
  • 1/2 can Corn Drained
  • 3/4 can Black Beans Drain and rinse
  • 1 Red Onion Diced
  • 1 Red Pepper Diced
  • 1 – 2 Jalapeños   Seeded
  • 1/2 tsp. Pepper
  • 1 tsp. Onion Powder 
  • 1 tsp. Garlic Powder 
  • 1 tsp. Olive Oil
  • 1 cup Mozzarella Cheese Shredded
  • 1 cup Salsa Optional for dipping

Instructions

  • Start by dicing the onion, red pepper, and seed jalapeños.

    These were so fun! We left out the jalapeno because we are not big fans of spicy foods, but they were still delicious and we devoured them all!
