While summer is approaching quickly, I am thinking about fresh, light and delicious salads. There are so many possibilities and the internet is flooded with many yummy salad recipes. They are perfect for lunch, a side dish for dinner or a party gathering. You can make this tomato cucumber salad for summer picnics and barbecues. Everyone will love it and takes only 10 minutes to make it.

Recently, I have been eating this cucumber feta salad almost every day. I just love it and it only takes a few minutes to make. Plus I am happy that I have a healthy lunch option. I’ve noticed that if you choose your favorite products…the ones that you like the most…the whole dish will become a favorite. I have one feta cheese that I only like to buy.

However, the last time I went shopping my local store was out of my favorite feta and I had to choose another brand. I quickly realized that my salad didn’t taste as good – choose your products wisely to make your recipe the best.

I added freshly cracked black pepper to this salad that I always have on hand. I omitted the salt in this recipe because the salad has plenty of salty flavor from the feta cheese…salty enough for me. However, if you want more you can certainly add it.

Tomato Cucumber Salad with Feta

Ingredients

  • 1 cup lettuce chopped
  • 1 tomato medium-sized sliced
  • 1/2 cucumber 10 slices
  • 2 Tbsp. chive chopped
  • 1/2 cup feta cheese cubed
  • 2 Tbsp. avocado oil
  • Pepper to taste

Instructions

  • In a medium bowl mix lettuce, tomato slices, cucumber slices and chive.
  • Add feta cheese cubes.
  • Season with freshly cracked pepper.
  • Drizzle with avocado oil.
