This is a simple egg in zucchini nests breakfast recipe that will fill you up and keep you on track. It’s packed with protein and fiber!

How To Make Gluten-Free Eggs In A Nest Recipe
These are a really easy breakfast that you can make in just a few minutes. In fact, you bake them in the oven – so you don’t even have to stand over the stove and watch them.
To make them, you will need a spiralizer. I know they make frozen zucchini noodles in the store, but it just isn’t the same. In fact, when you bake frozen zoodles, it releases water and doesn’t get nearly as crispy. The entire texture is off. I suggest using fresh zucchini that you slice with a spiralizer.
After you have your zucchini spirals, just make a little nest for the eggs. crack one egg in each nest, and then put the sheet in the oven to bake.
It really is that simple! I’ll even share some variations and ideas with you too so you can make them taste different each time.
Ingredients
There are literally 3 ingredients in these little nests – zucchini, eggs, and spices.
You do not have to peel the zucchini before you spiralize it. Depending on the size of the zucchini, you might have to cut up 2 of them if you want to make 6 egg nests.
Variations
Remember, whenever you add ingredients to this recipe, you alter how many calories it has and how much fat, carbs, and protein too. I suggest using a free online nutrition calculator if you change the recipe.
Here are a few different ways you can change this up and make it taste different each time.
- Use different spices – sprinkle some red pepper flakes on top for a bit of spice
- Add cheese – sprinkle some shredded cheese on the zucchini before you add the eggs
- Hot sauce
You can also eat it with some fresh fruit for a fiber-packed breakfast.

Equipment
- Spiralizer
- Baking Sheet
Ingredients
- 1 zucchini
- 6 eggs
Instructions
- Preheat the oven to 375 degrees F.
- Slice the zucchini using a spiralizer.
- On a prepared baking sheet (I used parchment paper), make 6 small piles of zucchini noodles. Leave a small divot in the middle to place each egg.
- Crack 1 egg in each of the zucchini nests. Top with salt & pepper.
