Summer is finally in full swing and it’s the PERFECT time to whip up a quick, easy and refreshing sweet treat – No Churn Dulce de Leche Ice Cream.

I feel like we get out of school so much later than everyone else.  My daughter’s last day of school was actually just this past Friday.  Honestly, that last week of school just makes me shake my head with wonder. 

They play games, watch movies, have a class party…watch more movies.  I guess it’s a good time to wind down from the year and a chance for the kids to have some fun with friends they might not be able to see over summer break. 

I just wish this last minute fun didn’t require getting up so early to catch that 7 AM school bus!

I’ve been in summer mode for a few weeks now and one of my favorite things to make during the summer is No Churn Ice Cream.  Have you ever made it before? 

It is SO easy to make, no ice cream machine is needed, and it’s the perfect activity to get your kids cooking in the kitchen.

All no-churn ice cream recipes start with the same basic base of whipping cream and condensed milk.  From there, you can let your imagination go crazy.  Our family favorite is this No Churn Salted Caramel Toffee Ice Cream.  This irresistible version even has crunchy bits of pretzels stirred into the mix.  But beware…it’s addicting!

Today, I’ll be sharing the recipe for an amazing, creamy No Churn Dulce de Leche Ice Cream.  Yes – dulce de leche!  If you aren’t familiar with this golden confectioner, dulce de leche is a combination of milk and sugar that is cooked slowly until the sugars caramelize and transform into a cream, thick spread bursting with flavor.

You can certainly make homemade dulce de leche, but I like to keep things easy and typically turn to the good folks over at Nestle for one of their premade cans.

To make this No Churn Dulce de Leche Ice Cream, you are going to want to get out your stand mixer and use the whisk attachment.  If you don’t have a stand mixer, no worries, you can use a hand mixer.  It might just take a little longer and your arm might get a little tired.

You only need 2 ingredients to make this No Churn Dulce de Leche Ice Cream:

2 cups of Whipping Cream
1 – 13.4 oz. can of Dulce de Leche

Start by pouring the whipping cream and dulce de leche into a chilled mixer bowl.  (I like to pre-chill my bowl because it just helps the whipping cream get light and fluffy and actually stay that way.)

Then turn on your mixer and whip until you start to see peaks form.  Like this…

At this point you can fold in any additional fun mix-ins you like such as toffee bits or mini chocolate chips.  With no churn ice cream, pretty much anything goes.  Once everything combined, transfer the mixture into a freezer-safe container, smooth down the top and cover tightly.  Freeze for 4-6 hours or overnight.  I find that no churn ice cream is best enjoyed within 2 weeks.

That’s it!  Simple, refreshing homemade no churn ice cream.

No Churn Dulce De Leche Ice Cream

Ingredients

  • 2 cups heavy whipping cream chilled
  • 1 can 13.4 ounces Dulce de Leche (I use NESTLÉ LA LECHERA)
  • 1/2 teaspoon sea salt

Instructions

  • Pour whipping cream into a chilled mixing bowl.
  • Spoon in can of dulce de leche.
  • Beat in large mixing bowl until soft peaks start to form.
  • Add pinch of sea salt.
  • Continue to beat until for 1-2 more minutes.
  • *add in any optional mix-ins:toffee bits, mini chocolate chips, additional dulce de leche swirls
