The holidays have passed and most of us are already wishing Spring was on its way. We wait to hear whether Punxsutawney Phil will see his shadow bringing us an early spring or endure six more weeks of winter. I’m always unhappy when it’s more winter days ahead #frownyface. That said there are lots of fun traditions and activities surrounding Groundhog Day we can all enjoy especially for the kids. Cute groundhog crafts and desserts are popular with preschools and kindergartners. What kid would love these Happy Groundhog Day Pudding Cups – so stinkin’ cute!
Let’s see how to make them!

These Groundhog Day Desserts just make me smile! They fit right in with these Groundhog Day Crafts & Desserts I put together a few years ago.
Pour coconut into a bowl and add 4-5 drops of green food coloring. Mix well.
Open one Nutter Butter Cookie and use the inside peanut butter as your “glue”. Of course, if you didn’t want to scrap the peanut butter out of the cookie you could always you some from a jar.
Spread a little bit of “glue” on the back of the eyes, nose (M&M’s), and teeth (marshmallow bits). Press onto the cookie.
Now, take some M&M’s and cut in half with a knife. These will become the ears. Take a little of the “glue” and spread on the bottom of the M&M and place on top of the cookie.
TIP: These cute little groundhogs can always be made ahead of time and kept in an airtight container until Groundhog Day.
Open up pudding cups and place the groundhogs in the pudding, then sprinkle the green coconut around the front and back of the cookie.
They’re ready to serve! What a cute Nutter Butter dessert – Enjoy!!
Happy Groundhog Day
