Toasted Coconut Pound Cake

★ shredded coconut ★ butter ★ eggs ★ all-purpose flour ★ granulated sugar ★ vanilla extract ★ buttermilk ★ baking powder & salt ★ for the glaze: powdered sugar, milk & coconut extract

Toast coconut on a sheet pan at 325 degrees F for 5-10 minutes.

Cream butter & sugar. Add vanilla & eggs. Separately whisk dry ingredients. Add to batter & add buttermilk.

Fold in toasted coconut with a spatula. Pour batter into a greased loaf pan.

Bake until set & let cool. Mix together glaze & pour on top.
