1. In a small saucepan over medium heat, melt the chocolate chips on the stove. Stir often until the chips are fully melted then stir in peanut butter until smooth. Remove from heat.
2. Add chow mein noodles and stir to combine fully.
3. Drop a tablespoon of the chocolate mixture on a sheet of wax paper or foil. Sprinkle with leaf sprinkles. Let sit for a few hours until the chocolate hardens. Makes about 15 to 20 haystacks. I made them in small batches - about five at a time, sprinkled them, and made more. That way the sprinkles would stick to the chocolate before hardening.
Store in a sealed container layering with wax paper!
