Ingredients

  • 1 zucchini
  • 6 eggs

Instructions

  • Preheat the oven to 375 degrees F.
  • Slice the zucchini using a spiralizer.
  • On a prepared baking sheet (I used parchment paper), make 6 small piles of zucchini noodles. Leave a small divot in the middle to place each egg.
  • Crack 1 egg in each of the zucchini nests. Top with salt & pepper.
  • Bake for approximately 25 minutes.
