Guacamole Deviled Eggs

Ingredients

  • 1

    avocado

    about 1 1/3 cups

  • 7

    hard-boiled eggs

  • 1/4 cup

    onion

    diced small

  • 6

    cherry tomatoes

    diced small
  • 1 tsp

    lime juice

  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp cumin
  • 2 tsp paprika

Instructions

  • Cut hard boiled eggs in half and remove yolks to a small bowl. Place white onto a tray or large plate. 
  • Add avocado to the egg yokes and mash mixing well the back of a spoon. Add in tomatoes and onions. Mix well. 
  • Add in lime juice, salt, and pepper. Mix well. Add mixture to a piping bag and pipe into the centers of the egg whites.
  • Top with paprika and cumin.
