Sweet Pickle Relish Recipe For Canning

This sweet pickle relish recipe is the perfect way to use those leftover garden vegetables. It’s perfect for beginning canners!

Making your own relish is so easy. All you do is chop up your veggies, add some sugar and spices, boil all of it, and then put them in canning jars. The best thing about this is, you can make it as spicy or as sweet as you like!

How To Can Sweet Pickle Relish

One of the best ways to preserve extra garden veggies like cucumbers and peppers is by canning. Lots of people start out canning salsa since it’s so easy. This sweet pickle relish is just as easy! You can’t fail.

The entire recipe is at the bottom of the post in a printable card. First, I have some questions I want to answer and tips I want to share.

What’s In Canned Pickle Relish

This is the perfect recipe for using up leftover garden vegetables. So if you have some extra cucumbers, onions, and peppers, give this idea a try!

Here’s what I used in my relish:

  • Cucumbers 
  • Chopped onions 
  • Chopped green pepper 
  • Chopped red pepper 
  • Salt
  • Sugar
  • Celery seed
  • Mustard seed
  • Apple cider vinegar

Best Type of Canning For Sweet Relish

I used the FRESHTech canning system for simple and worry-free canning, however, you can also use the water bath method as well.  Directions for the water bath method are below.

Water Bath Directions:

  • Add jars to into large pan of boiling water using your jar lifters. Make sure there is about 1″ of water covering the jars. Cover with lid.
  • Process for 15 minutes, lifting out jars using jar lifters. Place them on a clean towel to cool. Lids will be slightly curved down in the center – when they are sealed. 
With the use of a food processor, chopping vegetables is so easy for this sweet pickle relish.

Use A Food Processor

I can’t stress this enough! You need a food processor. Sure, you can chop all the peppers, onion, and cucumbers by hand. Why would you? One round in the food processor and the entire bowl is ready in less than a minute. Believe me, get one.

Cover chopped vegetables with water in a bowl and chill.

Cover Relish Mix With Cold Water

This is a very important step. Cover the entire bowl of relish mix with water and then let it chill for 2 hours. Then, drain all the water out of your relish mix. Rinse it completely and try to remove as much water as possible.

Now you are ready to make the relish. Oh, the smells at this step are drool-worthy. Bring this mixture to a boil and let it simmer for about 10 minutes. This step softens all the veggies and really lets the sugar and spices dissolve completely.

A scoop of this sweet pickle relish smells so good as it simmers and cooks.

Ladle Into Sterilized Jars

Now you are ready to put them into the hot, sterilized jars! Leave about a quarter-inch of room at the top of the jar and remove any air bubbles when you secure the lids to the top of the jars.

How Much Does This Make?

This recipe will make about 4 pints of relish or 8 half-pint jars. Plenty to share!

How Long Does Canned Sweet Pickle Relish Last?

Unopened jars of relish will last for 1 year, and opened jars will last in the refrigerator for up to 2 weeks. Do not freeze it.

Sweet Pickle Relish Canning Recipe

Equipment

  • Canning Jars
  • Candy or Meat Thermometer

Ingredients

  • 4 cups cucumbers
  • 2 cups onions onions
  • 1 cup red pepper chopped
  • 1/4 cup salt
  • 3 1/2 cups sugar
  • 1 tbsp celery seed
  • 1 tbsp mustard seed
  • 2 cups apple cider vinegar

Instructions

  • Begin by sterilizing your jars.  Preheat oven to 225 degrees F. Set the canning jars on a baking sheet and bake in the oven for at least 20 minutes.
  • Fill a small pan with water and add jar lids and rings. Place pan on the stovetop over low to medium heat and bring water to at least 180 degrees. A candy or meat thermometer works great for this
  • Using a food processer chop cucumbers, onions, and green and red peppers.
  • Place veggies in a large bowl.  Sprinkle vegetables with salt and cover with cold water.  Allow them to sit for at least 2 hours.
  • Rinse and drain thoroughly so you are able to get out as much water as you can.
  • Combine sugar, spices and vinegar in a large pot and bring to a boil
  • Add the drained vegetables and simmer for about 10 minutes
  • Ladle the hot relish into your hot sterilized jars, leaving about ¼ inch at the top.  Be sure to remove any air bubbles and secure your lids to the tops of the jars.
