Delicious & Healthy Mashed Potatoes

This is a great and unbelievably delicious substitute for mashed potatoes. What is it?…pureed cauliflower. I know, you are probably thinking yuck! If you have kids who need to get a little more veggies…this is perfect. They may never notice that they are not eating real mashed potatoes. Or if your on a diet…a great carbohydrate substitute!

How did I come up with this one. My son has disabilities with feeding issues. We are trying to expand what he will eat. So I cooked up a couple of heads of cauliflower, pureed it in a large pot and here is the secret ingredient…cheese. You don’t need a lot. I used Velveeta cheese so that it would not be stringy. No butter or milk- just make sure you drain the cauliflower well so it is not watery. Even my 16 year old daughter thought these were pretty tasty!

Cook cauliflower, drain well and puree. Add cheese to taste. So easy!
