Ice Cream Decorated Sugar Cookies

I made these sugar cookies for my friend’s daughter’s birthday. Since we missed her birthday celebration, I sent her a cute dress along with some delicious cookies.

Since it’s summer, ice cream themed cookies seemed like the way to go. I included some double scoop ice cream cones and popsicles. And just to let the birthday girl know that this set of cookies was just for her, I included some monogrammed cookies.

How to Make Monogram Cookies

To make the ice cream cones, I used an ice cream cone cookie cutter. You can find one almost anywhere that sells cookie cutters – your local craft store or even a kitchen supply store like Sur La Table.

I tinted the royal icing tan for the cone, chocolate brown for the chocolate sauce, red for the cherry, and green and pink for the ice cream. My first step was to outline the cone with tan royal icing and each of the ice cream scoops with either green or pink. Then, I went back to fill the cone, and while the tan royal icing was still wet, I piped the lines on the cone using the chocolate brown. As the cone dried, I filled in the ice cream scoops with icing.

I set the cookies aside to dry for about half an hour. Then I went back to pipe and fill the chocolate sauce with chocolate brown royal icing. While the royal icing was wet, I sprinkled it with rainbow jimmies. To finish off the cookie, I piped and filled the cherry, and while it was still wet, I went back to draw a little line at the edge of the cherry to give it a little dimension.

I loved these Ice Cream Decorated Cookies so much that I’m thinking of making another set of ice cream themed cookies. This time I’m thinking of including an ice cream truck!

Ice Cream Decorated Cookies

Ingredients

  • For the Sugar Cookies:
  • 1 cup unsalted butter, softened
  • cups confectioners' sugar
  • 1 large egg at room temperature
  • 1 tbs good quality vanilla extract
  • cups all-purpose flour
  • 1 tsp salt
  • For the Royal Icing:
  • 5 tbs meringue powder
  • ¾ cups water
  • 1 tbs good quality vanilla extract or any other non-oil based flavoring

Instructions

  • For the Sugar Cookies:
  • Preheat the oven to 400 degrees F.
  • In a large bowl, sift the all-purpose flour and salt. Set aside.
  • In the bowl of a mixer fitted with a paddle attachment, cream the butter and sugar.
  • Once fluffy, add the egg and vanilla. Mix until just combined.
  • Add the dry ingredients. Mix until just combined.
  • Place the dough in a bowl, and allow it to rest for about 15 minutes. Do NOT refrigerate this dough. The cookies must be rolled out and baked right after the dough is made.
  • Line sheet pans with parchment paper or silicone baking mats.
  • Lightly flour a work surface and roll the dough out to about ¼ inch thickness. Cut out desired shapes and bake for about 7 to 8 minutes. If you'd like soft cookies, make sure that the cookies do not brown.
  • Once the cookies are baked, allow the cookies to cool on the baking sheets for about 5 minutes. Then transfer the cookies to a cooling rack to cool completely.
  • For the Royal Icing:
  • In the bowl of a mixer place the meringue powder and water. Whisk by hand for a few minutes until the powder is dissolved and the mixture bubbles.
  • Add the vanilla and hand whisk for an additional minute.
  • Place the bowl in the mixer fitted with a paddle attachment.
  • Add all the confectioners' sugar at once.
  • Mix on medium speed for about 5 to 7 minutes. You know the mixture is ready when it's white, fluffy, and stiff enough to hold peaks.
