Ant Picnic Cupcakes For Summer

What season makes you guys the happiest? For me, it’s probably summer. There’s nothing better than being able to be outside more and enjoy the sun. This time of year is especially great if you have kids because you can get them out of the house and keep them busy!  

One of my favorite things to do with my kids is to take them on picnics! Today I’m going to be walking you through one of my favorite treats: Ant Picnic Cupcakes. Believe me, Picnic Cupcakes are a great way to bribe your kiddos to eat their fruits and veggies first.

Ant Picnic Cupcakes

Makes 12 cupcakes 

Ingredients 

1 box of triple chocolate mix

3 eggs

1/2 C (1 stick) of softened unsalted sweet cream butter

1 1/4 C whole milk

cupcake liners

cupcake pan 

Directions for cupcakes

Preheat the oven to 350 and line the cupcake pan with the liners.

In a medium bowl, combine the cake mix, butter, and milk and mix until combined.

Using a medium ice cream scoop, scoop the batter into the cupcake liners and fill about 3/4 of the way full.

Bake in the oven for about 21 minutes.

Pull out and place on the side to cool.

Frosting Ingredients

1 C unsalted 

3 C powder sugar

3 – 5 TBSP heavy whipping cream 

1 tsp Vanilla bean paste

2 disposable piping bags + 2 piping bag couplers with number 2 tips 

red food coloring and black food coloring

a box of whopper candies

Directions for Icing

In a standing mixer, combine the butter, powder sugar, vanilla, and heavy whipping cream. 

Mix on medium speed until stiff and creamy.

If you still see powdery pebbles, add in 2 more tbsp heavy whipping cream. 

Continue to mix until stiff and creamy.

Divide the frosting into three bowls and add the red food dye into one bowl and the black into another bowl, leaving the third bowl of frosting plain.

Scoop the red frosting into one piping bag and the black frosting into another.

Using a butter knife, frost your cooled cupcake using the plain frosting.

You want the top of the frosting on the cupcake to be flat and smooth.

Using the red frosting, pipe an outline around the top of the cupcake.

Pipe on lines inside the circle going horizontal and vertical to make squares. 

Alternating between squares, fill in a few to make a “Plaid” look.

Place 3 whopper candies in the middle of the top of the cupcake to create the ant body.

Using the black frosting, pipe on legs and his eyes.
