This veggie dish is one of my favorite “go-to” recipes. Not only is this Roasted Zucchini and Potatoes Side Dish easy to make it is also delicious and compliments any main course! Essentially it is two ingredients and a little seasoning…can’t get any easier! Great flavor too!
6 Medium Red Potatoes
1 tsp. Thyme
2 tbsp. Olive Oil
Salt and Pepper to taste
Preheat oven to 350 degrees.
Chop the zucchini and potatoes and spread evenly over a baking sheet. Drizzle with olive oil and toss to coat. Sprinkle with thyme, salt and pepper. Toss one more time so all ingredients are coated with seasoning.
Place baking pan in the oven on a center rack for 40 minutes occasionally turning. Cook until lightly brown and veggies are cooked.
I like to cover my baking sheets with foil to make clean up a cinch!
