FALL CHOCOLATE HAYSTACK COOKIES

Sometimes you need a no-fuss no-bake dessert. One of my favorites is the haystack cookie – they are so simple and very tasty. I gave mine a twist this year when I came across these fun leaf sprinkles at my local grocery store. Loving these Fall Chocolate Haystack Cookies…an easy way to celebrate the season!

What I love about Fall are the colors. Plenty of oranges and reds which make everything feel warm and cozy. Snuggle up with this hot Chai Tea Latte or bake a loaf of this Banana Pumpkin Bread with cinnamon swirl…so good! Another favorite is this Pumpkin Spice Honey Butter – yep, super yummy to spread on your favorite bread or roll.

I have lots of delicious cookie recipes but none are as colorful for fall as these chocolate haystack cookies!

There is no secret to making these pretty Fall treats. Follow the recipe and sprinkle them with the mini leaf sprinkles!

DIRECTIONS

1. In a small saucepan over medium heat, melt the chocolate chips on the stove. Stir often until the chips are fully melted then stir in peanut butter until smooth. Remove from heat.

2. Add chow mein noodles and stir to combine fully.

3. Drop a tablespoon of the chocolate mixture on a sheet of wax paper or foil. Sprinkle with leaf sprinkles. Let sit for a few hours until the chocolate hardens. Makes about 15 to 20 haystacks. I made them in small batches – about five at a time sprinkled them and made more. That way the sprinkles would stick to the chocolate before hardening.

Store in a sealed container layering with wax paper!

    1. Thanks, Nancy! Actually the leaves are paper doilies from the dollar store. They make a pretty back drop for just about anything!
