Loaded Mashed Potatoes Appetizer Bites

There is nothing better than an easy party appetizer! That’s why I love these cheesy Loaded Mashed Potatoes Appetizer Bites! The perfect easy to serve bite-size potato appetizer!  Seriously, I made these for a party recently and they were gone before things got hoppin’!

You can make them with just a few ingredients and can be made ahead of time. Pop in the oven to bake and quickly garnish before serving. So easy…and who doesn’t love loaded mashed potatoes?!

How To Make Loaded Mashed Potatoes Appetizer

DIRECTIONS:

Preheat the oven to 375 degrees. Spray 2 mini muffin pans (or use 1 pan twice) with cooking spray.

Stir together the mashed potatoes, egg 3/4 cup cheddar cheese, and 2 tablespoons chopped bacon. Using a spoon, scoop the potato mixture into cups, packing the potatoes down into each cup. Bake for 30-35 minutes or until golden brown and crisp around the edges.

Remove the pan from the oven, top the potato mixture with the remaining 1/4 cup cheddar cheese and return to the oven for 3 more minutes.

Remove the pan from the oven and transfer to a rack. Let potatoes cool for 5 minutes.

Using a knife or mini metal spatula, transfer the potato cups to a serving dish and top a dollop of sour cream with the remaining tablespoon of chopped bacon. Serve immediately.

Ingredients

  • 3 cups mashed potatoes homemade or store-bought family pouch, box potatoes work too
  • 1 large egg lightly beaten
  • 1 cup cheddar cheese shredded and divided
  • 3 tablespoons bacon cooked and chopped
  • 1 tablespoon chives fresh chopped {optional}
  • 1 cup sour cream

    1. I made these and froze them. They reheated beautifully in the microwave. Great to keep handy to use for a quick side dish too!

  1. How long should these be baked before removing? I feel a little more comfortable w/a time rather than “until brown around the edges”, lol.

  2. Did you say they can be made ahead ? At what point do you stop and refrigerate or freeze. And if using instant mashed potatoes , you do make them according to the recipe first , right!

    1. I did not make mine ahead but another reader did and kept them in the freezer until she was ready to serve. She warmed them in the microwave. Place the sour cream and bacon on before serving. I would imagine you could keep them in the refrigerator for a day maybe two and warm and serve but I have not done this. Yes, follow package instructions for the potatoes – they were good!

    1. Hi, I am sorry to say I don’t remember. It has been a few years since I made them. I used my mini muffin tin twice so I am guessing 18-24 mini potato bites. Sorry, I can’t give you a better answer.
